Update/Basil Fried Chicken Recipe!!

DSC03710Well, Hello 2018!! It’s literally been forever since I’ve come on and made a blog post. It seems like I’ve made a habit of saying what I really want to accomplish for myself, and then I lose sight of what I say I want for myself and continue to pour into others. Luckily, I have a super supportive husband who knows what I want, and he challenges me. He’s one of the few people I actually listen to, so when he challenged me to get back into Vlogging/Blogging, I decided to accept the challenge!! Thanks for the push babe. Any who, I’m easing myself back in. I would love to do weekly uploads, and that is my goal. To be realistic though, twice a month is probably where I need to start. I already have some pre recorded material that I plan on editing and adding to my YouTube page. If you don’t know what the name of the page is, Its simply “MealswiththeMillions” on YouTube as well. One of the pre-records I had was for a fried chicken recipe that I grew up with. Its soooo good, and actually writing about it now makes me want some (I can’t though, I’ve also challenged myself to no meat for while, but that’s whole different post for sure!). It’s extremely simple, yet flavorful and if you can’t already tell by the title, it does have basil in it! Which throws some people for a loop, but I’m telling you… just try it!

I have to get better with the blogging, I’m not going to lie. So the video to the recipe will be attached as soon as the video goes live, but this post won’t include as many pictures as I would like because I simply didn’t take any!! I promise, one of the things I will work on is taking more pictures of the process.

Ok enough chatting, Here is the recipe below!!! If you try it out, please let me know how you like it!!

Please note: I used about 2 lbs of chicken for the measurements below. adjust (add more/less) depending on the amount of chicken you use

  • Chicken (I prefer wings, but use whatever part of the chicken you like) 
  • 1 tsp garlic powder 
  • 1 tsp onion powder
  • 1/2 tsp of cayenne powder 
  • 1 tsp of paprika 
  • 1 1/2 tsp of Tony’s seasoning ( if you don’t have this, its ok!) 
  • desired amount of black pepper 
  • 1 tsp of dried basil 
  • 1 cup of flour
  • 1/2 cup of corn starch 

Add vegetable oil to your frying pan. Start heating your frying pan. This is where a lot of people go wrong. This step can take anywhere from 10-20 mins to get the oil to the proper temperature. Allow your oil to heat up well. If you can’t determine the temperature, use a thermometer. It should be around 350-375 degrees. This step is super important.

Throughly clean the chicken. I prefer wings and I actually prefer to cut the tips off the wings because the chicken lays better in the frying pan. After cleaning, pat dry.

Add all of the seasonings listed above and coat the chicken throughly. You can allow the chicken to marinate, but it’s not necessary.

Mix together 1 cup of flour and 1/2 cup of corn starch. Add the seasoned chicken to the flour mixture. Coat well. Make sure flour mixture covers the entire piece of chicken.

Check the oil. One quick way is to toss some of the flour mixture into the oil and see if the oil sizzles up. If it does, its ready!

Add the chicken to the hot oil. Remember, don’t over crowd the frying pan.

Allow the chicken to cook throughly on both sides. This can take about 15-20 mins depending on the size of the chicken pieces. Allow the excess oil to drip off of the chicken and place the pieces on a plate covered with paper towels. Sprinkle the chicken with a light layer of finishing salt or sea salt.

Let cool and enjoy!
